Couscous with Zucchini and hummus
You know I love my Zucchini! It is one of my favorite vegetables I love to use in my recipes. I am always on the road and when I am on my way to an appointment or work or just for seeing friends, I get hungry. I don´t want to eat unhealthy food on the way. I mean you can get a salad or some fruit in the market but it is not the same as a home cooked dish for on the road.
Easy to make and taste to eat.
For today I made a couscous with grilled zucchini with homemade hummus.
You think `gosh that´s not easy!` Well let me tell you “Off course it is!” Homemade Hummus you can make for the whole week because when you store it in a glass jar with olive oil on top in the fridge, you can enjoy your hummus for about a week. The recipe of the classic hummus will follow.
What do you need
- 1 cup couscous
- 1 cup water
- 1 Zucchini, chopped in slices
- 3tbsp Homemade hummus
- 1 Garlic clove, finely chopped
- 1 Onion, finely chopped
- ½ Cucumber, finely chopped
- Sea salt
- Black pepper
- Olive oil
- 2tsp Sumac
- Lemon juice
- 2tsp pine nuts
- Fresh parsley, finely chopped
When everything is chopped we can start. Heat the grill pan without oil for the zucchini. Put the garlic and onion in a saucepan with olive oil and stir until it becomes fragrant. Then pour in the couscous and fill the same cup with the same amount of water and stir the water into the pan. Leave it with the lid on medium/low heat for about 7 minutes. Stir regularly.
When your grill pan is hot, press the zucchini slices in the pan. Press them good on the grill and hear them sizzle. Grill them on each side until you see the grill chalk on the zucchini. When they are done, let them cool down. Meanwhile roast your pine nuts for a couple of minutes in a dry pan and leave them on the side for the salad.
Check your couscous and stir, add some salt and pepper and a drizzle olive oil and mix it into the couscous, let it cool down for a few minutes.
Pour the chopped cucumber into a big bowl add the lemon juice and olive oil and stir it well. Pour in the couscous and stir it with the hummus through the salad. Add salt and pepper with the fresh parsley on top, put the zucchini on the couscous and stir once more. Get yourself a nice plate, put your couscous salad on the plate with the sumac and pine nuts on top and put the last slices of zucchini on the salad and ENJOY!
