I am going to share one of my favorite recipes of all time. This is our family recipe and it is so good that everyone need to try it. Kisir is a vegan/vegetarian salad. You can wake me up for this salad any day of the week.
You can make it with different ingredients and mix it with anything you like. I always make it with tomatoes and cucumber and onions.
What do you need.
- 2 cups of bulgur
- 2 cups of water
- 1tsp tomato paste
- 1tsp pepper paste
- 2sp olive oil
- 2tsp red pepper flakes
- 2 onions, finely chopped
- 3 spring onions, finely chopped
- 2 garlic clove, finely chopped
- ½ cucumber, finely chopped
- 2 or 3 tomatoes, finely chopped
- 1 green pepper, finely chopped (sweet or spicy)
- Fresh parsley, finely chopped
- Lettuce you love the most
What do you need for the dressing.
- Olive oil
- 2tsp pomegranate syrup
- 1 fresh lemon juice
- Sea salt
- Black pepper
- 2tsp mint flakes
- 2tsp sumac
Let’s get started.
When everything is chopped finely, we can get started. First put the onions and garlic in a hot pan with olive oil. Get a wooden spoon and stir the onions and garlic in the oil. Then put the tomato and pepper paste and mix it with the onions and garlic. Add the bulgur and stir everything together. Add the 2 cups of water and put the lid on the pan on medium heat and let it do it’s magic for about 7 minutes. Meanwhile get a big bowl and put your lettuce, spring onions, green pepper, tomatoes and cucumber in. Sir the bulgur and close the lid again. Add the mixture for the dressing in a separate bowl. If the water is solved into the bulgur you can get the lid off and let it cool down for a few minutes. Then mix the bulgur through the salad and add the dressing, stir it all together and sprinkle the fresh parsley and extra sumac on top.
Your Kisir is ready to serve.
If you want to take the kisir to work or school I only advice you to keep the tomatoes out of the salad and serve them separately because they can make the salad a little bit mushy and we don’t want that.
